Whole dried hibiscus calyces for a deep ruby-red infusion. The flavour is bright and cleanly sour, close to cranberry, with a soft floral finish. Brew it hot for a warming winter cup, or let it cool and serve it over ice with a slice of lemon - the colour alone makes it worth the jug.
One generous pinch per cup is enough. The longer it steeps, the deeper the colour and the sharper the tang, so brew it to your own taste.
